$18We are proud to present our entry for the 2024 Made With Love festival, partnering with Bridgeland Distillery in Calgary, and following the theme of spring après-ski.
We strived to create a food and cocktail pairing that tastes like bright spring sunshine, with sweet floral notes reminiscent of the wildflower meadows emerging from under the ski hill's melting snowpack. The spirit base for our cocktail is inspired by the mountains: Grappa and Limoncino from Italy, sitting in the shadows of the Alps where the après was born; and Träkál crafted from native botanicals founds in the mountains of Patagonia. Alongside these botanicals, further floral 'wildflower' notes are added through a chamomile tea syrup, locally-foraged boreal bitters, and a dash of Evoolution honey and ginger white balsamic.

This mocktail version of our cocktail entry retains the same flavour profile of The Meadow Below, with bright tangy citrus and sweet floral notes. Locally foraged boreal bitters add a taste of our local terroir whilst our non-alcoholic 'spirit' Seedlip provides the backbone with its gin-style grassy and herbaceous flavours.

We strived to create a food and cocktail pairing that tastes like bright spring sunshine, with sweet floral notes reminiscent of the wildflower meadows emerging from under the ski hill's melting snowpack. Following our cocktail entry in drawing inspiration from the Italian Alps, we settled on an aperitivo-style bruschetta that is light, moreish and a perfect post-ski bite. A crunchy base of toasted focaccia is topped with luscious house-made vegan whipped ricotta, and sprinkled with an assortment of sweet fruits, tossed with citrus and a white honey-ginger balsamic. A delicate pile of microgreens completes this beautifully complex snack, served as three bitesize pieces.

Ditching the vermouth and olives for something brighter, we've used citrus-forward Lillet Blanc and limoncino alongside ginger liqueur and bitters.
